Byrrh: the "Cathedral" of aperitifs
Implanted over a hundred years in Thuir, the Byrrh caves are now a high place of wine-based aperitifs.
The whole secret of preparing the Byrrh through a mix of aromatics and ingenious plant cleverly married that gives its subtlety and uniqueness. This fabulous magic is accomplished during a very careful ageing in oak casks.
The train station hall, designed by
Gustav Eiffel in XIXth century, the gigantic alleys, housing more than 600 barrels and the largest wooden vat
in the world, are the witnesses of the Violet family ambitions for Byrrh.
Classified in 1994, remarkable taste site,
and having obtained in 2003 the label Tourism and Economic Decouverte, Byrrh Caves are known for their quality, history and especially for their symbolic nature, which is now one of the inescapable sites in our department.
