A tradition in salting and canned fish in Collioure
Since the XVI century Collioure was already famous for its salted anchovies and a special royal decree granted continuation of the production.
Ets Roque is one from two remaining anchovy salting families.
Anchovies from Collioure are a long history for the Roque family since 1870, when Alfonso Roque moved to Collioure as cooper, then in 1922, his son Leo founded the family business.
Today, the company Roque continues the tradition in new premises, with a modernized range and customers outside the regional borders.
Back in medieval times Collioure’s reputation revolved around the salting of anchovies, sardines and tuna. Salting is a hard way of making a living and, generation by generation, the anchovy salting families have become fewer and fewer. In 1870 there were 140 boats and 800 fishermen. Now, in Collioure, only two anchovy salting families remain:
Ets Roque and
Ets Desclaux. Visit them !
The skill and artistry with which the anchovies are arranged in their jars and indeed the entire preceding labour intensive production line should ensure a heightened appreciation of the fiddly little fish when next you meet them in your Salad de Collioure.
Tour and tasting
The company offers food and condiments from the region: olives, honey, marmalade, tapenade ... You will also find various glass jars and canned sea: sardines rillettes, terrine de Saint Jacques with Ginger , spider sea terrine, mackerel rillettes ... And, of course, different flavors of anchovies salted anchovies, oil anchovy, fillets anchovy in brine, boquerones (anchovies laundered in vinegar), cream anchovies and anchovy paste, olives stuffed with anchovies ...
Company tour: the tour takes place in the old production shops, where you can see the work of the anchovies. You can also enjoy a free pair of anchovy (traditional and marinated) - Welcome public: individuals and groups (20-25 people maximum) - by reservation for groups

- Visit: Monday through Friday (excluding public holidays from 8am to 11.45 and from 2pm to 16h45
- Store: 7 / 7 (until Friday from 8am to 7pm, Saturday and Sunday from 9am to 12am and from 14:30 to 7pm)
